Chocolate Flapjacks
Preheat the oven to 150°C (gas mark 2); if using a fan oven, reduce the temperature to 130°C for even baking. Start by preparing the chocolate, which is the key ingredient in this delicious recipe. Take a good quality chocolate, preferably one with a cocoa content of over 70%, and break it into smaller pieces. Place the chocolate in a heatproof bowl, being careful not to overfill it, as the chocolate will melt and increase in volume. Then, fill a saucepan with water and place it on the stove over low heat, making sure the water does not boil, but just steams. Place the bowl with the chocolate on top of the saucepan and let it melt slowly, stirring occasionally to prevent burning.
Meanwhile, in another saucepan, add the diced butter and sugar, stirring them over low heat. This step is essential as you want the butter to melt evenly and the sugar to dissolve, creating a homogeneous mixture. Once the chocolate has completely melted, remove the bowl from the double boiler and pour the warm chocolate over the butter and sugar mixture. Add the honey, which will bring natural sweetness, and the vanilla extract to enhance the flavors. Stir with a spatula until all the ingredients are combined and you achieve a smooth mixture.
Next, add the oats, which will provide texture and nutrients to the dish. Make sure to incorporate them well into the mixture so that each flake is covered in chocolate. After mixing, prepare a heatproof dish of about 18 cm x 28 cm. Grease it with a little oil to prevent sticking, then place a sheet of baking paper for extra safety. Pour the chocolate and oat mixture into the prepared dish, using a spatula to level it evenly.
Place the dish in the preheated oven and bake for 35-40 minutes. It is normal for the dish to still be soft in the middle after this time; that’s how it should be. Once the baking time is up, remove the dish from the oven and let it cool completely. This step is essential as cooling will allow the dish to firm up a bit, making it easier to cut later. After it has cooled, cut into desired portions and enjoy this rich chocolate delicacy, perfect for any time of the day.
