Preparation time: 30 minutes
Baking time: 1 hour
Total time: 1 hour and 30 minutes
Servings: 8
Ingredients
- 500 g chicken liver
- 2 chicken breasts (approximately 400-500 g)
- 4 raw eggs
- 4-5 boiled eggs
- 1 bunch green onions
- 1 bunch green garlic
- 1 bunch dill
- 1 bunch parsley
- Spices for pâté (salt, pepper, sweet paprika, to taste)
- Oil for greasing (optional)
- Baking paper
Step 1: Preparing the liver
1. Start by boiling the chicken liver. Add enough water to cover it completely and a pinch of salt. Boil for about 15-20 minutes, until well cooked.
2. After boiling, remove the liver and let it cool slightly, so it can be handled easily.
Step 2: Preparing the meat
1. Meanwhile, chop the chicken breast using a food processor or meat grinder. Make sure to achieve a fine texture, but not too mushy.
2. Once the liver has cooled, chop it as well and add it to the ground chicken.
Step 3: Adding aromatic ingredients
1. Finely chop the green onions, green garlic, dill, and parsley. These ingredients will add a fresh and vibrant flavor to your pâté.
2. Add all these greens to the bowl with the ground meat, mixing well to incorporate them evenly.
Step 4: Seasoning
1. It’s time to add the spices! Add salt, pepper, and if desired, a little sweet paprika for a touch of color and flavor. Mix everything well, ensuring that each ingredient is coated with spices.
Step 5: Enriching the mixture
1. Add the 4 raw eggs to the meat bowl and mix vigorously. The eggs will help bind the mixture and give a fluffier texture to the pâté.
2. Make sure everything is well homogenized and that you have a consistent mixture.
Step 6: Preparing the mold
1. Prepare a loaf pan. Line the bottom and sides with baking paper to prevent the pâté from sticking.
2. Place half of the pâté mixture in the pan, leveling it well.
Step 7: Adding the boiled eggs
1. Make space in the mixture for the boiled eggs. Arrange them along the pan, pressing down slightly to integrate them into the mixture, but being careful to keep them visible.
Step 8: Finalizing the dish
1. Cover the eggs with the remaining pâté mixture, leveling it well on top.
2. Beat the two remaining eggs and brush the surface of the pâté with them, so that you achieve a golden and appetizing crust at the end.
Step 9: Baking
1. Preheat the oven to 180°C (350°F).
2. Place the pan in the oven and bake the pâté for about 45-60 minutes, or until it becomes golden and firm to the touch. Check with a toothpick; if it comes out clean, the pâté is ready.
Step 10: Serving
1. Let the pâté cool in the pan for 10-15 minutes, then remove it to a platter.
2. Slice it and serve it alongside a fresh salad or pickles.
