The chocolate and mascarpone cake is truly a delicacy, perfect for any special occasion. It is a dessert that impresses not only with its taste but also with its extravagant appearance. It can be decorated as you wish, but I recommend using fresh strawberries, white and dark chocolate for a special visual effect.

Preparing the base starts with mixing cocoa with boiling water. It is essential to mix well to avoid lumps, after which let the mixture cool. In another bowl, beat the egg whites with 150 grams of sugar until you obtain a firm foam. This will give the cake an airy texture. Separately, beat the egg yolks with a pinch of salt and 150 grams of sugar until it becomes a frothy mixture, and the sugar completely dissolves. Gradually add the oil, as you would for mayonnaise, then incorporate the cooled cocoa mixture and the flour mixed with baking powder. Use a mixer to obtain a homogeneous mixture without lumps. Finally, gently fold in the egg whites with upward motions to avoid losing air from the mixture. Pour the mixture into a 28 cm mold, greased with butter and dusted with flour, and bake for 40 minutes at 180 degrees Celsius. Check with a toothpick if it is baked inside.

Once the base has completely cooled, cut it into three layers. Preparing the cream is simple: whip the cream until it becomes firm. In a separate bowl, mix the mascarpone with powdered sugar until creamy and homogeneous. Add the vanilla sugar and gradually fold in the whipped cream. If you want a more soaked base, you can prepare a syrup from water and sugar, but this base is already moist and fluffy, so it is not necessarily required. Fill the cake with the mascarpone cream, keeping some aside to coat the cake at the end.

For decoration, melt the dark chocolate and dip the strawberries in it, then place them on baking paper to harden. Repeat the process with white chocolate, and if you want an artistic look, use a piping bag to decorate the cake with dark chocolate and then with white chocolate. Place the strawberries on top of the cake, and for a touch of originality, you can add cake pops made from crumbled sponge cake mixed with mascarpone cream, coated in chocolate.
