Ingredients:
- 1 fresh cleaned carp, about 1.5 kg
- 200 g walnuts, ground
- 2 large onions, finely chopped
- 2 cloves of garlic, minced
- 1 bunch of fresh dill, chopped
- 1 bunch of fresh parsley, chopped
- 3 tablespoons of olive oil
- 1 lemon (juice and grated zest)
- Salt and pepper to taste
- 1 teaspoon dried mint
- 1 teaspoon dried sage
- Aluminum foil
Preparation:
1. Preparing the carp: The night before, clean the carp and wash it well under cold water. Rub it inside and out with salt, pepper, mint, and sage. Wrap it in aluminum foil and refrigerate overnight. This step is essential to allow the flavors to penetrate the meat, giving it an intense taste.
2. Preparing the filling: In a pan, heat 3 tablespoons of olive oil. Add the onion and garlic and sauté over medium heat until golden and fragrant. This step will add depth to the filling. Then, add the ground walnuts, dill, and parsley. Mix well to combine the ingredients, then add the lemon juice and grated zest. Let the filling cool slightly.
3. Stuffing the carp: Remove the carp from the refrigerator and unwrap the foil. Fill the inside of the carp with the walnut mixture, making sure to fill it evenly. This step will not only enhance the flavor but also help keep the fish moist during baking.
4. Baking the carp: Preheat the oven to 180°C. Place the stuffed carp on a baking tray lined with parchment paper or aluminum foil to prevent sticking. Cover the carp with aluminum foil to keep it moist during baking. Bake for 30 minutes, then remove the foil and leave it in the oven for another 15 minutes to achieve a slightly golden crust.
5. Serving: Once the carp is cooked, remove it from the oven and let it rest for a few minutes. You can serve it with a fresh salad or grilled vegetables for a perfect lunch or dinner. A side of oven-baked potatoes or mashed potatoes pairs wonderfully with this dish.
Useful tips:
- Make sure the carp is fresh, as quality fish will make a difference in taste.
- If you want a more aromatic version, you can add a few slices of lemon and some sprigs of rosemary inside the carp before stuffing it.
- Don't hesitate to experiment with other types of nuts, such as almonds or hazelnuts, to create a customized filling.
