To create a delicious and slightly different dessert, start by mixing the sunflower oil well with honey and sugar. This combination will create a flavorful and rich base for your cake. It is normal for the mixture to appear sugary in the early stages, but don't worry, as later, when you add the soy or coconut milk, the texture will transform. Make sure to mix well so that the sugar completely melts and integrates perfectly into the composition.

In a separate bowl, sift the flours together with the baking powder and salt. This step is essential, as sifting the dry ingredients will ensure a fluffy cake without lumps. Once you have a homogeneous mixture, add the liquid mixture over the flour. Use a spatula or a whisk to gently mix, being careful not to form lumps. The consistency of the dough should be fluid but not too liquid.

Now, it's time to add the fruits to the dough. I used frozen blackberries, which were quite large, so I decided to arrange them nicely in a circle on top of the dough. I advise you to gently push them into the mixture so that they integrate perfectly and provide a contrast of textures and flavors.

Prepare a tray, greasing it with margarine and dusting it with flour to prevent the cake from sticking. Pour the dough into the tray, making sure to level it evenly. Then, place the tray in the preheated oven at 180 degrees Celsius and let it bake for about 35 minutes. I recommend checking from time to time with a toothpick; it should come out clean when the cake is ready.

After the cake is baked, let it cool in the tray for a few minutes, then you can transfer it to a rack to cool completely. Finally, don't forget to dust it with powdered sugar for an elegant appearance and an extra touch of sweetness.
