Mini Fruit Tarts
The recipe for vanilla cream is a delicacy that brings a touch of elegance and refinement to any dessert, perfect for accompanying a tart, a cake, or even a simple bowl of fresh fruit. As spring makes its presence felt, with the shining sun and blooming flowers, cooking becomes a pleasant and relaxing activity. To prepare the vanilla cream, we start with the necessary ingredients: 500 ml of milk, 100 g of sugar, 4 egg yolks, 50 g of cornstarch, a vanilla pod or a teaspoon of vanilla extract, and a pinch of salt.
The first step is to prepare the ingredients. In a saucepan, we bring the milk to a boil, along with the vanilla pod cut lengthwise and the seeds extracted. If using vanilla extract, it will be added later. In a separate bowl, we mix the egg yolks with the sugar and a pinch of salt until we obtain a creamy and light-colored mixture. Then, we add the cornstarch, mixing well to avoid lumps.
When the milk starts to boil, we gradually pour it over the egg yolk mixture, stirring continuously. It is important to do this slowly, so as not to cook the eggs. After the mixture is homogenized, we put it back on low heat, stirring constantly until the cream begins to thicken. When it reaches the desired consistency, we take it off the heat and, if using vanilla extract, we add it now, mixing well.
After the cream has cooled a bit, we transfer it to a clean bowl and cover it with plastic wrap, making sure the wrap touches the surface of the cream. This step is essential to prevent a skin from forming. We let the cream cool completely, then we can use it to fill the previously prepared tart or to create various delicious desserts.
