Gundel Pancakes
To prepare a delicious pancake filled with walnuts and cherries, we will start by gathering the necessary ingredients. It is important to have 200 g of ground walnuts, 150 g of sugar, 1 packet of vanilla sugar, the grated zest of one lemon, 100 g of raisins, rum essence to taste, 250 ml of milk, and 200 g of pitted cherries.
In a medium saucepan, we will add the ground walnuts, sugar, vanilla sugar, lemon zest, raisins, and rum essence. This mixture will bring an intense aroma and a special taste to our dish. We mix the dry ingredients well to ensure that the flavors combine perfectly.
After obtaining a uniform mixture, we gradually add the milk, stirring continuously to prevent lumps from forming. Now, we add two large tablespoons of pitted cherries, which will add a touch of acidity and freshness to the composition. We place the saucepan on low heat, making sure to stir constantly. This step is essential, as the mixture needs to thicken, and it should not stick to the bottom of the saucepan.
After about 10-15 minutes, the mixture will start to thicken, and the aroma will be captivating. When we achieve a creamy and rich consistency, we take the saucepan off the heat and let the filling cool slightly.
In the meantime, we prepare the pancakes. We can use a classic pancake recipe or opt for a slightly thicker version. When the pancakes are ready, we turn our attention to filling them. We take one pancake and put a generous portion of the mixture in the center, then fold the pancake in half or into quarters, depending on preference.
These pancakes filled with walnuts and cherries will be a true culinary delight. We can serve them warm, dusted with powdered sugar or accompanied by a cherry sauce.
