Recipe history
The wafer cake with nougat cream and walnuts has its roots in baking traditions from various cultures, serving as an ingenious way to use simple ingredients to create a festive dessert. Wafers, widely used in various sweet dishes, symbolize culinary creativity, while the rich fillings of walnuts and nougat provide a unique taste, reminiscent of childhood for many of us.

Step by step to a perfect dessert

1. Preparing the base
- Start by separating the egg whites from the yolks. This step is essential for achieving a fluffy and airy base.
- Whip the egg whites until frothy, gradually adding one cup of sugar. Continue mixing until the foam becomes firm and shiny.
- In a separate bowl, combine the yolks with the oil, vanilla sugar, and sifted flour. Mix well until homogeneous.
- Add the chopped walnuts, nougat, and raisins to the yolk mixture and gently fold in with a spatula.
- Gently fold the whipped egg whites into the yolk mixture, being careful not to lose the air from the whites.
- Pour the mixture into the prepared pan (it can be lined with baking paper) and place it in the preheated oven at 180°C for about 30 minutes. When ready, the base should be golden and pass the toothpick test – inserted in the center, it should come out clean.

2. Preparing the cream
- In a saucepan, melt the butter over medium heat. Add half a cup of sugar and stir until completely dissolved.
- Once the butter has melted, add the yolks and stir constantly until the cream begins to thicken. It is important not to let the cream boil, but to thicken it gently to avoid coagulating the eggs.
- Once the cream has thickened, remove it from the heat and let it cool slightly.

3. Assembling the cake
- Place a wafer sheet on a platter. Spread a portion of the cooled cream, then place the walnut base on top.
- Add another layer of cream, followed by another wafer sheet. Continue this process until all ingredients are used, ensuring that the last layer is a wafer sheet.
- Cover the cake with another platter or a tray and let it chill in the fridge for a few hours, ideally overnight, to allow the flavors to meld.

Serving
This cake can be served simply, with a dollop of whipped cream or a chocolate sauce to add a decadent touch. Drizzle a bit of rum essence on top before cutting to enhance the flavors.

Useful tips
- If you want to add an exotic touch, you can replace the nougat with candied fruits or chocolate.
- Use roasted walnuts for a more intense flavor and a crunchy texture.
- Make sure the base is completely cooled before assembling it with the cream to prevent it from melting.

Nutritional benefits
This cake offers a good combination of carbohydrates and healthy fats from walnuts, making it a good source of energy. Walnuts are rich in omega-3 fatty acids, while nougat adds a hint of natural sweetness, reducing the need for additional sugar.
