Snack with Gorgonzola
In a generous bowl, start by rubbing gorgonzola with soft butter, ensuring to achieve a fine and creamy composition that blends perfectly. Gorgonzola, with its distinct flavor, will provide an intense and savory taste, while the butter will add a velvety texture. Once you have this delicious base, gradually add the flour, mixing with a spatula or your fingers to avoid lumps. Continuing, incorporate the ground nuts, which will add a crunch and a unique flavor, perfectly complementing the cheese.
After successfully integrating all the ingredients, it's time to gently knead the dough, just enough to bind well. Do not overwork it, as we want to maintain a pleasant texture. Once the dough is formed, shape it into a roll with a diameter of about 4-5 cm. Wrap the roll in plastic wrap, ensuring it is well sealed, and place it in the refrigerator, ideally overnight. This chilling stage is essential as it allows the flavors to meld and makes the dough easier to cut.
The next day, take the roll out of the fridge and, using a sharp knife, cut it into slices about 0.5 cm thick. Place these slices on a baking tray lined with parchment paper, leaving a small space between them to allow for expansion during baking. Preheat the oven to 175 degrees Celsius and place the tray in the middle of the oven. Bake for about 12-15 minutes, or until the cookies turn golden and slightly browned. It is important to keep an eye on them, as each oven may vary in baking time.
Once the cookies are done, remove them from the oven and carefully transfer them to a cooling rack to cool completely. As they cool, they will harden and develop a crunchy texture. These gorgonzola and nut 'cookies' are not only flavorful and delicious but also versatile. They can be enjoyed as a hearty snack, perfect for packing at work or served as an appetizer alongside a cold beer. Their rich flavors and interesting texture make them an excellent choice for any occasion.
