Croissants with Butter and Cheese
To prepare these fluffy delights, we start by placing the flour in a large bowl, ensuring it is well sifted to eliminate any lumps. We add sugar, which will provide a pleasant sweetness, and dry yeast, an essential ingredient that will help the dough rise beautifully. The next step is to pour in the warm milk, being careful to add it gradually while mixing constantly. The warm milk activates the yeast and contributes to achieving a soft and airy texture.
Once the milk is incorporated, we add the oil, which will make the dough finer, then the egg white, which will add moisture and contribute to its structure. We don't forget the salt, which will balance the flavor and enhance the aromas. We knead the dough well until it no longer sticks to our hands, a process that may take a few minutes but is worth the effort. Once the dough is ready, we cover the bowl with a clean towel and let it rise for about 30 minutes, until it doubles in volume.
After it has risen, we take the dough and divide it into 12 equal pieces, each the size of a tennis ball. Each piece of dough is rolled out with a rolling pin, forming a circle, which we brush with melted butter to give it a rich flavor and delicious texture. We repeat this procedure with each piece of dough, stacking them on top of each other. Once finished, we let them rise again for 15 minutes.
After it has risen, we roll out the dough into a large sheet, then cut it first in half, then into quarters, and each quarter into three triangles. On each triangle, we place a portion of cheese, which can be cottage cheese, telemea, or even a mixture of cheese with herbs, depending on preferences. We roll each triangle tightly, forming a mini-croissant. We place the rolls on a baking tray lined with parchment paper, making sure to leave some space between them to allow for rising.
Finally, we brush the surface with a beaten egg to achieve a golden and glossy crust, and sprinkle poppy seeds on top, which adds both aesthetic appeal and a subtle flavor. We bake in a preheated oven at 180 degrees Celsius for 25 minutes or until they become golden and appetizing. After baking, we let them cool slightly before enjoying them. These rolls are perfect both warm and cold, and will surely be appreciated by everyone who tastes them!
