Russian cream – a delicious and refined dessert, perfect for any occasion. This simple Russian cream recipe is based on eggs and is quick to prepare, allowing you to enjoy an elegant and creamy dessert served in a glass, with a mix of fresh fruits. With a total preparation time of about 30 minutes, followed by a cooling period, you will get four delicious servings.

Necessary ingredients:
- 4 large eggs
- 100 g sugar
- 500 ml whipping cream
- 1 packet of vanilla (or 1 teaspoon of vanilla extract)
- 300 g fresh fruits (strawberries, raspberries, blueberries, or a mix of fruits)
- 2 tablespoons of lemon juice (optional, for fruits)

Preparation time: 10 minutes
Cooling time: 20 minutes
Total time: 30 minutes

Step 1: Preparing the cream
In a large bowl, beat the eggs together with the sugar using an electric mixer or a whisk. Beat until the mixture becomes fluffy and doubles in volume, which will take about 5 minutes. It is essential for the sugar to dissolve completely, so the cream is smooth and homogeneous.

Step 2: Incorporating the cream
Add the whipping cream and the packet of vanilla to the egg and sugar mixture. Use a spatula to fold in the cream with gentle up-and-down motions to avoid losing air in the mixture. This technique will give the cream an airy and creamy texture.

Step 3: Cooling the cream
Once you have a homogeneous mixture, transfer the cream into glasses or individual bowls. Cover them with plastic wrap and let them chill in the refrigerator for 20 minutes to cool and thicken.

Step 4: Preparing the fruits
While the cream is cooling, wash the fresh fruits under a stream of cold water. If using strawberries, cut them in halves or cubes. If desired, drizzle the fruits with lemon juice to enhance their flavor and prevent them from oxidizing. This step is optional but adds a touch of freshness.

Step 5: Assembling and serving
After the cream has cooled, take the glasses out of the refrigerator and add a generous layer of fruits on top. You can decorate with fresh mint leaves or a bit of whipped cream for a more sophisticated look. This quick and elegant dessert is perfect for serving at a special dinner or simply to indulge during a relaxing afternoon.

Possible variations:
For added flavor, try adding a few drops of almond essence to the egg cream or replace the fresh fruits with fruit compotes or purees. You can also experiment by adding melted chocolate to the cream mixture for a decadent version of Russian cream.

Practical tips:
Make sure all ingredients are at room temperature before preparation, which will help achieve a better emulsion. Also, don’t forget to use fresh eggs, as they significantly impact the final taste and texture of the cream.

Enjoy this refined and simple dessert that will surely impress anyone who tastes it!

Gelatin is soaked in some cold water. The egg yolks and sugar are beaten until they become a foam. We squeeze the gelatin well, dissolve it in about 100 ml of pineapple juice (leftover from the can) over low heat. We add the rum (if desired). First, we add 2-3 tablespoons of the egg yolk cream mixture to the dissolved gelatin. We incorporate the resulting mixture into the rest of the cream. We place it in the fridge. Meanwhile, we beat the egg whites and separately the whipped cream. When the egg yolk cream starts to thicken, we add the pineapple pieces, whipped cream, and beaten egg whites. We put it in a glass or cup and let it cool for 2-3 hours. The Russian cream is decorated to taste and served cold.

Ingredients: 1 can of pineapple, 6 tablespoons of rum, 2 sheets of gelatin, 4 egg yolks, 100 g sugar, 2 egg whites, 200 g liquid cream, something for decoration.
