To preserve the delicious flavor of peaches, the process of preparing the compote is essential. We start by thoroughly washing the jars and their lids. We place them in a large pot, covering them with enough water to completely submerge them. We turn on the heat and let it boil for about 10 minutes. This step is crucial for ensuring sterilization, thus avoiding contamination of the final product. After the time has expired, we cool the water slightly, but not completely, and carefully take out the jars, placing them mouth down on a clean surface, such as a kitchen towel that has been washed without fabric softener. This will allow excess water to drain and ensure proper hygiene.

If we wish, we can speed up the drying process by placing the jars in the preheated oven, but with the heat turned off. In the meantime, we focus on the peaches. We wash them well, soaking them in a basin with water and a tablespoon of baking soda. This method helps remove impurities and clean the fuzz from the skin. After rinsing them well under cold running water, we remove the stems and cut the peaches in halves or quarters, discarding the pits.

The next step is to fill the jars with pieces of peaches, being careful not to crush them. It is important to leave a small space at the top of the jar. After that, we add sugar, the amount depending on personal preferences, and fill with water to the brim. We seal the jars with airtight lids and place them back in the pot of water, ensuring they do not touch each other. We cover the jars with newspapers or cloths to prevent them from breaking during boiling.

We boil over moderate heat for about 15 minutes, starting to count from the moment the water begins to boil. After the time has passed, we remove the pot from the heat and leave it covered with a towel or blanket to retain the heat. It is essential that the jars cool slowly so that the sugar dissolves completely, even if it does not melt immediately. The next day, when the jars are completely cooled, we can observe how the compote has acquired a uniform consistency and an intense aroma, ready to be enjoyed on winter days. This peach compote is not just a delicacy, but also a way to bring summer into every moment of the year.
