Preheat the oven to 220°C (425°F) and prepare a baking tray with parchment paper so that the biscuits do not stick at all. This recipe proves to be not only delicious but also very easy to make, perfect for a savory breakfast or a sweet snack. We start by gathering all the necessary ingredients: flour, sugar, baking powder, salt, butter, one egg, milk, and raisins. It is important to have all the ingredients at room temperature to achieve a uniform and well-homogenized dough.

In a large bowl, add the dry ingredients, mixing the flour with sugar, baking powder, and salt. This is a crucial step to ensure an even distribution of the leavening agents. After you have made this mixture, take another bowl and beat the egg with a little milk from the total amount. Add this mixture over the dry ingredients, along with the cubed butter. It is essential to work quickly and efficiently, activating the mixer at low speed for exactly 2 minutes. If you prefer to knead by hand, make sure not to exceed 5 minutes, as over-kneaded dough can make the scones dense and not rise properly.

Once the dough has been homogenized, carefully incorporate the raisins, mixing gently so as not to damage its airy texture. Turn the dough onto a floured work surface. It will be soft and slightly sticky, but don't worry, this is a good sign. Shape it into a round form, about 4 cm thick. You can use a rolling pin or your fingers to achieve the desired shape.

To cut the biscuits, take a cookie cutter or a glass with a thin edge. Place the biscuits on the prepared tray. Break the remaining egg, mix it with a little water, and brush each biscuit with this mixture, being careful not to let it run over the edges to allow for even rising. After you have completed this step, place the tray in the refrigerator for 30 minutes. This is a trick that helps the biscuits retain their shape during baking.

After removing the tray from the refrigerator, brush the biscuits again with the egg solution, ensuring it does not drip over the edges. Bake them in the preheated oven for 12-15 minutes, or until they become golden and fluffy. Once done, take them out of the oven and let them cool on a wire rack. These biscuits are wonderful served with butter and your favorite jam, alongside a cup of warm milk. It is a hearty breakfast that is, as mentioned, simply irresistible.

After cutting the biscuits, you will be left with some dough scraps. These can be kneaded, although they won’t rise as well in the oven, but they will remain just as fluffy inside. So, don’t throw them away, but transform them into another delicacy!

Ingredients: For 8 pieces (plus the edges) 2 cups (280-290 g, depending on humidity) flour 2 medium eggs (one for the dough and the second for brushing) 2 1/2 tablespoons of sifted sugar 3/4 tablespoon of baking powder 55 g of soft butter 125 ml of milk 2 1/2 tablespoons of golden raisins (yellow sultanas)
