When the edges start to turn golden, it is a sign that the cookies are ready. We immediately remove them from the tray using a knife or spatula to avoid breaking them, as they are very fragile. Once they cool completely, we can assemble them. We spread each pair of cookies with a spicy apricot or raspberry jam, adding a note of freshness and contrast to the sweetness of the dough.
