Ganache Cream

Strawberry Cream
- 1 packet of strawberry-flavored ice cream powder (60 g)
- 200 ml cold milk
- 1 teaspoon gelatin

- 300 ml liquid cream

Preparation
Step 1: Preparing the White Cake
1. Separating the eggs: In a bowl, separate the egg whites from the yolks.
2. Beating the yolks: Whisk the yolks with 3 tablespoons of sugar until they become a light-colored foam.
3. Egg whites: In another bowl, beat the egg whites until stiff peaks form.
4. Combining ingredients: Add the beaten egg whites to the yolk mixture. Sift the flour mixed with baking powder and a pinch of salt and carefully fold it in using a spatula, with gentle up-and-down movements.
5. Baking: Pour the mixture into a round greased and floured pan. Bake in a preheated oven at 180 °C for about 35 minutes, or until a toothpick comes out clean. Let it cool.
Step 2: Preparing the Black Cake
1. Separating the eggs: Follow the same procedure as for the white cake.
2. Beating the yolks: Whisk the yolks with 5 tablespoons of sugar, then add cocoa and oil and mix well.
3. Egg whites: Beat the egg whites until firm and add them to the yolk mixture.
4. Incorporating flour: Sift the flour with baking powder and a pinch of salt, then gently mix.
5. Baking: Pour the mixture into the prepared pan and bake for 40 minutes, checking with a toothpick. Let it cool.
Step 3: Ganache Cream
1. Melting the chocolate: In a saucepan, heat 200 ml of liquid cream, being careful not to let it boil. Add the chopped dark chocolate and stir until completely melted.
2. Cooling: Let the cream cool, then add 50 ml of whipped cream, gently mixing.
Step 4: Vanilla Cream
1. Boiling the milk: Bring 200 ml of milk to a boil with the sugar. Once the sugar has dissolved, add the cornstarch mixed with 50 ml of milk.
2. Thickening: Continuously stir until the cream thickens. Add vanilla essence to taste.
Step 5: Strawberry Cream
1. Preparing the gelatin: Soak the gelatin in a little water for 10 minutes. Then, melt it in a double boiler.
2. Preparing the cream: Mix the ice cream powder with 200 ml of cold milk until thickened. Add the melted gelatin and mix well.
3. Whipping cream: Whip 100 ml of separate cream and add it to the strawberry mixture. In the remaining cream, add the yellow food coloring and mix.
Assembling the Cake
1. Soaking the layers: The layers can be soaked with a syrup made from warm water with sugar and vanilla essence, adjusted to taste.
2. Layering: Cut the white cake in half and the black cake into four slices. Place one slice of black cake, add half of the vanilla cream, then a slice of black cake, the strawberry cream, a slice of white cake, half of the ganache cream, another slice of black cake, the rest of the vanilla cream, a slice of white cake, and finally, the rest of the ganache cream, covering with the last slice of black cake.
3. Decorating: Frost the sides of the cake with yellow whipped cream and the top with white whipped cream. Personally, I created a handle from marshmallows to mimic the appearance of a beer mug.
