Instructions

1. Preparing the ingredients: Start by peeling all the vegetables. Cut the carrots, celery, bell pepper, and onion into small cubes, and slice the leek into thin rings. Cut the potatoes into larger cubes, about 2-3 cm, to maintain their texture after boiling.

2. Boiling the vegetables: In a 4-5 liter pot, add 2-3 liters of water and bring it to a boil. Once the water starts boiling, add the chopped vegetables (except for the potatoes) and the oil. Cover the pot with a lid and let it simmer over medium heat for 15-20 minutes. This step is essential for the vegetables to release their flavors and soften slightly.

3. Adding the potatoes: After the vegetables have boiled for a quarter of an hour, add the diced potatoes. Continue to boil everything together for another 10-15 minutes, until all the vegetables are well cooked.
