Let's see how we can transform a simple ingredient like cauliflower into a special dish.

Preparation time: 15 minutes
Baking time: 40-45 minutes
Total time: 60 minutes
Servings: 4-6

Ingredients
- 900 g fresh cauliflower
- 400 g sour cream (12%)
- 220 g cheese (you can also use cheddar or mozzarella for a different flavor)
- 2 eggs
- 1 large bunch of onion
- 1 tablespoon grated parmesan (for extra flavor)
- Pepper and salt to taste
- Butter for greasing the dish
- 2 tablespoons breadcrumbs (for a crunchy crust)

Preparation instructions

1. Preparing the cauliflower: Start by washing the cauliflower well and cutting it into florets. Then, in a large pot of salted water, bring the cauliflower to a boil. Let it boil for 15 minutes, starting from when the water is boiling. This step is essential for achieving a soft texture, but not overcooked.

2. Preparing the ingredients: While the cauliflower is boiling, chop the onion finely and cut the cheese into cubes. In a separate bowl, beat the eggs and mix them with the sour cream. This mixture will bind all the ingredients and add delicious creaminess to the dish.

3. Preheating the oven: It is important to preheat the oven to 180 degrees Celsius so that it is ready when you finish preparing the cauliflower.

4. Draining the cauliflower: When the cauliflower is boiled, remove it from the water and let it drain in a colander for 2-3 minutes. This step helps to eliminate excess water, preventing a too-wet dish.

5. Assembling the dish: Grease a baking dish with butter and line it with breadcrumbs. Then, place a uniform layer of cauliflower, sprinkle some breadcrumbs, then half of the cheese, the chopped onion, salt, pepper, and less than half of the sour cream and egg mixture. Repeat this process with another layer of cauliflower, followed by the remaining ingredients, finishing with the sour cream mixture and a tablespoon of grated parmesan on top.

6. Baking: Place the dish in the preheated oven and let it bake for 40-45 minutes, or until the surface becomes golden and crispy.

7. Serving: The baked cauliflower is served hot. It can be a perfect accompaniment to meat or enjoyed as a vegetarian main dish.

Useful tips:
- You can add other vegetables, such as carrots or broccoli, for a more colorful and nutritious dish.
- If you want a lighter version, you can omit the eggs from the recipe and use only sour cream.
- Instead of cheese, try feta cheese for a saltier taste.
- For a touch of freshness, add fresh herbs like parsley or dill to the sour cream mixture.

Now you are ready to transform a simple ingredient like cauliflower into a true culinary feast. Enjoy every bite!
