Oven-Baked Cod Fillets

I've prepared this recipe several times, especially when I need a quick meal but still want to feel like I've cooked something healthy. If I'm using frozen fish, I let it thaw overnight in the fridge, and then things go quickly. Cod doesn't have many bones, which is practical when you're making multiple servings or don't want to waste time on details.

Ingredients

6 pieces of cod fillets (fresh or frozen, thawed beforehand)
olive oil (enough to coat the fillets, usually 2–3 tablespoons are sufficient)
salt
freshly ground pepper
(optional) lemon juice, for serving

Instructions

1. If the fillets are frozen, I thaw them slowly in the fridge. If I'm in a hurry, I put them in cold water, but I never leave them at room temperature.
2. Once thawed, I rinse the fish under cold running water and gently pat it dry with paper towels.
3. In a small bowl, I mix the olive oil, salt, and pepper. The proportions are to taste, but there should be enough salt to ensure the fish isn't bland.
4. I place the fillets in a baking dish in a single layer.
5. I pour the oil, salt, and pepper mixture over the fillets and coat both sides evenly.
6. I cover the dish (with foil or a lid, depending on what I have) and let the fish marinate in the fridge for 30 to 60 minutes. For me, half an hour is the minimum, but if I have time, I let it sit longer.
7. In the meantime, I preheat the oven to medium heat (about 180°C, if you have a thermostat).
8. After marinating, I place the covered dish directly in the preheated oven.
9. I let the fish cook for 25–30 minutes until the fillets are tender. I don't open the oven frequently. If the fillets are thicker, I check after 30 minutes to avoid drying them out.
10. Finally, I take the dish out, uncover it, and squeeze a bit of lemon juice over the top before serving.

It's the kind of dish that doesn't require constant attention. Once you've set the fillets to marinate, you can go about your other tasks. I like that it doesn't require hard-to-find ingredients and easily adapts to any schedule. The cod has a pleasant texture after baking, and I don't have to watch it closely. I use fillets of similar thickness so they cook evenly.

Substitutions

Instead of cod, you can use any other firm white fish, such as haddock or pike perch, if you find them more easily.
Olive oil can be replaced with sunflower oil, but the flavor will be somewhat more neutral.

Can I use frozen fish directly without thawing it?
I do not recommend this. If you don’t thaw the fillets, they will release too much water while baking, and the fish will come out watery, not tender.

How salty should the oil mixture be?
You don’t need to add a lot of salt, just enough to coat the fillets on both sides. I use about half a teaspoon for 6 fillets, but it can be adjusted to taste.

Is it necessary to cover the dish in the oven?
Yes, in this recipe, covering helps keep the fish moist and prevents it from drying out on the surface.

How can I tell if the fillets are done?
The fish should be white and flake easily with a fork. If it still looks gelatinous in the center, leave it for a few more minutes.

Can I add extra spices during marinating?
