Ingredients:

*For the cake base:*
- 8 eggs
- 1 cup of sugar
- 100 ml concentrated coffee
- 200 g butter
- 2 cups of flour
- 1 packet of baking powder
- 1 vial of rum essence

*For soaking:*
- 1 espresso coffee
- 3 tablespoons of sugar
- 1 tablespoon of powdered milk for coffee
- 2 tablespoons of Hennessy cognac

*For the cream:*
- 150 ml Hennessy cognac
- 3 eggs
- 100 g flour
- 4 tablespoons of powdered sugar
- 50 g chocolate
- 250 g butter
- 100 g cocoa
- 300 ml milk

*For the glaze:*
- 200 g dark chocolate
- 200 g sugar
- 100 ml concentrated coffee

*For decoration:*
- A tube of white glaze
- Crushed white chocolate
- 1 packet of bitter chocolate-covered coffee beans

Preparation:

1. Preparing the base: Start by separating the egg whites from the yolks. Beat the egg whites until stiff, adding a few drops of vinegar for a more stable texture. When the foam becomes firm, gradually incorporate the sugar, continuing to mix until it completely dissolves. Add one yolk at a time, mixing well after each.

2. Adding wet ingredients: To the mixture obtained, add the concentrated coffee, melted (but cooled) butter, and rum essence. Mix well.

3. Incorporating dry ingredients: Sift the flour together with the baking powder and gradually incorporate them into the mixture, using a spatula to avoid losing air from the egg whites.

4. Baking the base: Preheat the oven to 180°C. Grease a cake pan with oil or margarine and dust it with flour. Pour the mixture into the pan and bake for 45 minutes. Check with a tester if the base is baked (if it comes out clean, it’s ready).
