For this delicious recipe, we start with a fresh pork tenderloin, which we carefully slice to obtain a uniform piece. It is important to use a sharp knife to avoid scratching the meat, and the slicing should be done lengthwise, leaving one side uncut, like a type of 'book' that will be filled. After preparing the tenderloin, we generously salt it, adding freshly ground pepper for extra flavor. With the help of a meat mallet, we gently pound it, being careful not to make it too thin, so it doesn't dry out while cooking.

For the flavorful filling, we sauté finely chopped onion in heated oil until it becomes translucent. We add a few slices of colorful bell pepper, which will bring not only taste but also an appealing appearance. Once they have softened, we add fresh or canned mushrooms, diced. We season with a little vegeta, pepper, and for a touch of freshness, we also add chopped fresh parsley. We mix the ingredients well, allowing them to swell slightly so that the flavors combine.
