To create a special and tasty dish, I started by peeling the potatoes, carefully selecting them to ensure they are the best suited for a creamy and flavorful mashed potato. Meanwhile, I continued with the preparation of the pork meat. I chose a pork tenderloin, which I cut into small pieces, about the size of a bite. I placed the meat in a plastic bag, added flour, salt, and pepper, then sealed the bag tightly and shook it vigorously, so that each piece is evenly coated. This technique not only helps achieve a delicious crust but also prevents mess in the kitchen.

In a deep skillet, I heated a few tablespoons of olive oil. When the oil was hot, I added garlic cloves, which I sliced thinly to release their aroma. After a few moments, I added the pork meat, being careful not to overcrowd the pan so that each piece could fry evenly. I let the meat brown well on all sides until it developed a golden and appetizing crust, at which point the aroma of garlic began to fill the entire kitchen.

Once the meat was perfectly fried, I splashed it with half a glass of white wine, choosing a dry wine that would complement the flavor of the meat. I let the sauce reduce slightly, cooking the ingredients together for about 5 minutes, allowing the flavors to blend harmoniously.

When the potatoes were ready, I drained them and passed them through a ricer, adding butter and milk to achieve a creamy and smooth puree. Finally, I served the pork with its delicious sauce alongside the mashed potatoes, garnishing the dish with a little sweet chili jam, which adds a pleasant contrast and a hint of spiciness.
