Meanwhile, stir occasionally to prevent a crust from forming at the bottom of the pot. Wait until the milk starts to boil.

2. Adding the cornmeal: Once the milk is boiling, it’s time to add the cornmeal. It’s important to pour the cornmeal in a rain-like manner while continuously stirring with a whisk or wooden spoon. This will prevent lumps from forming and ensure a fine and creamy polenta.

3. Cooking the polenta: After you’ve added all the cornmeal, continue stirring for about 10-15 minutes until the polenta begins to pull away from the pot walls. It should have a thick but creamy consistency.

4. Adding the cheese and butter: Remove the pot from the heat and add the crumbled (or grated) sheep cheese and butter.
