To prepare a nut delicacy with syrup, we need about 4 kg of unformed nuts that have a gelatinous appearance. The first step is to clean them by removing the outer shell until the actual shell forms, which is usually still white and soft. This process requires a bit of patience, but the final result will be worth the effort.

Once the nuts are clean, we place them in a container with cold water, making sure they are completely covered. It is recommended to place a heavy object on top so that the nuts stay submerged and do not oxidize. We leave the nuts in water for 24 hours, changing the water 2-3 times to prevent them from darkening.

The next day, we take the nuts out of the water and rinse them well under a stream of cold water. In a pot, we prepare the syrup from 1 kg of sugar, a tablespoon of honey, the juice of one large lemon, and ½ liter of water. We put all the ingredients on the heat, stirring constantly until the sugar is completely dissolved. Once the syrup starts to boil, it is time to add the nuts and, optionally, 1-2 pieces of cinnamon, vanilla, or cloves, to add a special fragrance.

We boil the nuts in the syrup, being careful not to leave them on the heat too long, as we do not want to caramelize the sugar. It is important to stir occasionally to ensure that the nuts cook evenly. When the syrup becomes thicker and, if we take a spoon and let a few drops fall, they should form a small ball and the nuts should float nicely in the pot, it is a sign that our delicacy is ready.

After turning off the heat, we let the nuts cool slightly in the syrup, then carefully transfer them to sterilized jars. Make sure the syrup completely covers the nuts to prevent fermentation. Seal the jars tightly and store them in a cool, dark place. This recipe will not only bring a delicious taste but will also create pleasant memories around the table. Enjoy!
