To make a delicious cake, we start by beating the eggs with sugar using a mixer. It is essential to ensure that the sugar completely dissolves, resulting in a homogeneous and fluffy mixture. This step is crucial as it will influence the final texture of the cake. In a separate bowl, we combine the flour, cornstarch, baking powder, and vanilla. The cornstarch will give the cake a special fineness, while the vanilla will add an irresistible fragrance.
Once the mixture of dry ingredients is uniform, we will gradually add it to the egg mixture, pouring it in a rain-like fashion to prevent lumps from forming. It is important to mix with a wooden spoon, being careful not to overmix, in order to keep the air in the mixture. At this point, we will also add the oil, which will make the dough moister and tastier. Don’t worry if the dough seems firmer; this is the desired consistency.
Prepare the baking pans; fill them about halfway or a little more, leaving room for rising. Now is the time to add the famous bonus ingredients: pieces of fresh fruit, crunchy nuts, or delicious chocolate, depending on personal preferences. These can be gently mixed into the batter with a teaspoon, ensuring that each bite is an explosion of flavors.
After we have finished preparing the batter, we head to the oven, which should be preheated to 170 degrees Celsius. The cake will bake for about 20 minutes, but it is important to watch the baking process closely. The aroma that will fill the kitchen will make you want to taste them as soon as they are ready. You can also experiment with cocoa, creating a delicious contrast between the white dough and the cocoa one. Personally, I chose to make 12 white cupcakes and 12 with cocoa, thus varying the textures and flavors.
To facilitate filling the molds, I use an ice cream scoop, which allows me to distribute the batter evenly without effort. This method is not only simple but also very effective, especially when preparing larger quantities. After the cakes are baked, let them cool slightly before removing them from the molds to keep them intact. Enjoy them plain, or alongside a scoop of ice cream, for a perfect dessert!
