The meat is pounded thin, similar to schnitzels, to obtain tender and delicious rolls. After we have pounded them well, we generously season them with salt and pepper, then set them aside to infuse with flavors. Now we turn our attention to the filling that will transform these rolls into true delights.

The smoked ham, with its unmistakable aroma, is cut into small cubes and sautéed in a pan with 20 ml of hot oil. It is important to sauté it until it becomes slightly crispy, then we add a little water, enough to cover the ham. We cover the pan with a lid and let it simmer, stirring occasionally, until the water evaporates and the ham remains in its aromatic fat.

Meanwhile, we take care of the four eggs, which we crack into a bowl and beat well with a fork until homogeneous. Over the beaten eggs, we add the fried ham, half of a bunch of finely chopped fresh parsley, a teaspoon of pepper, and a pinch of salt. We mix everything well, and the resulting mixture will be transformed into a delicious omelet.

This omelet will become the filling for the pieces of pounded meat. We place the omelet on each piece of meat, then carefully roll them up, ensuring that the ends are well sealed to prevent the filling from leaking out. We also secure the rolls with toothpicks, so they remain compact during cooking.

Once the rolls are prepared, we focus on the aromatic sauce in which we will boil them. We start by grating a carrot on a fine grater, and we finely chop the two onions. In a pan, we sauté the vegetables in the remaining oil until they become translucent. We add the peeled and sliced tomatoes, season with paprika, salt, and pepper, and mix well. We place the meat rolls in this delicious combination and let them sauté lightly on the vegetables until they change color.

After the rolls have whitened, we add enough water to completely cover them, along with 2-3 sliced garlic cloves for added flavor. We cover the pot with a lid and let it simmer on low heat, being careful to check occasionally if more water needs to be added. Slow cooking will ensure that the meat becomes extremely tender and flavorful.

When the meat is well cooked and the sauce has reduced, we can decide whether to add sour cream to enrich the sauce's flavor, although it is just as delicious without it. We serve the rolls with the delicious sauce, and everyone can add sour cream according to their preferences. Enjoy your meal!
