To prepare a delicious and flavorful dish, we start by preparing the liver. Choose a fresh liver, preferably beef or chicken, and slice it thinly, making sure to clean off any veins or membranes. Once you finish slicing, wipe the slices with a damp cloth to remove any traces of blood and impurities. Now, it's time to take care of the flavors that will add extra taste to the dish. Finely chop a combination of herbs, such as parsley, dill, and green onion, which will envelop the liver in fresh aromas. Additionally, crush a bay leaf to extract its essences, and carefully cleaned mushrooms will be sliced thinly.

In a pot or a deep dish, add a generous amount of oil and start forming a layer of thin liver slices. Over each layer of liver, sprinkle the chopped herbs and sliced mushrooms, repeating this process until the ingredients are used up. Cover the dish with a lid or aluminum foil to retain moisture, and place it over medium heat or in an oven preheated to 180 degrees Celsius. Let it simmer for 45-60 minutes, or until the liver is fully cooked but still tender.

Once the liver is cooked, carefully remove it from the dish and keep it warm so it retains its juiciness. Next, add a tablespoon of flour to the remaining sauce in the pot or dish, stirring vigorously to avoid lumps. Deglaze with broth or warm water, bringing the mixture to a boil until the sauce thickens and becomes creamy. Season the sauce with salt, pepper, and lemon juice or vinegar, to taste, for a balanced flavor.

To serve, slice the liver and arrange it on a platter. Pour the hot sauce over it, or serve it on the side to be added to taste. This dish pairs wonderfully with a side of boiled rice or mashed potatoes, alongside a fresh salad or pickles, which will add a note of freshness and crunch.
