Unleavened Sweet Bread
Dough: In a larger bowl, put 200 g of high-quality flour in the evening and make a well in the center. Here, add 4 whole eggs, 2 yolks, 100 g of granulated sugar, a pinch of salt, 50 ml of sunflower oil, 200 ml of lukewarm milk, and 25 g of fresh yeast dissolved in a little warm milk. Mix the ingredients gently until a homogeneous mixture is obtained. Cover the bowl with a thicker towel and leave it in a cooler place, away from drafts, until the next day, to allow the yeast to work its magic.
The next day, return to the dough and mix the starter with a spoonful of flour, then gradually add all the remaining flour. Pour in the melted margarine, which should be warm, not hot, so as not to destroy the yeast. You can also add your favorite spices, such as cinnamon or vanilla, for extra flavor. Knead the dough well until it becomes elastic and homogeneous. After that, let it rise in a warm place, covered, until it doubles in volume, an essential step in achieving a fluffy and delicious sweet bread.
Filling: For the filling, beat the egg whites with a little salt and sugar to taste until foamy. Then add the sour cream, high-quality cocoa, rum essence, and mix well until a smooth and homogeneous cream is obtained. This mixture will provide an intense taste and wonderful texture to the sweet bread.
After the dough has risen, roll it out on a floured surface, forming a thin sheet. Spread the previously obtained cream evenly and sprinkle with diced Turkish delight, chopped nuts (but not too finely, to maintain texture), and raisins. All these ingredients combine perfectly and contribute to the flavor of the sweet bread.
Carefully roll the dough, forming a tight roll, and then place it in a greased pan, letting it rest for another 15 minutes. Meanwhile, preheat the oven to 180 degrees Celsius. Bake the sweet bread for about 45 minutes at a moderate temperature until it becomes golden and aromatic. It is recommended to let it cool slightly before slicing to preserve its juiciness and highlight its aroma. Enjoy each slice with pleasure!
