Today, I propose a simple and quick recipe for mini pizzas that will turn any meal into a celebration. These snacks are perfect for parties, picnics, or simply for a relaxing afternoon at home. With accessible ingredients and an easy-to-follow technique, you will get fluffy and flavorful mini pizzas that will surely impress everyone.
Necessary ingredients:
- 500 g wheat flour (choose type 000 flour for a finer dough)
- 250 ml lukewarm water (or milk for a richer texture)
- 25 g fresh yeast (or 7 g dry yeast)
- 40 g butter or lard (butter gives a richer taste)
- 1 tablespoon sugar (helps activate the yeast)
- 1 tablespoon olive oil (for extra flavor)
- 1.5 teaspoons salt (helps develop flavor)
- Tomato sauce (preferably homemade or from a quality can)
- Grated mozzarella or cheese (for a delicious topping)
- Dried oregano or basil (for flavor)
Preparation instructions:
1. In a small bowl, dissolve the yeast in lukewarm water (or milk) along with the tablespoon of sugar. Let the mixture sit for 5-10 minutes until a foam forms on the surface. This is a sign that the yeast is active.
2. In a large bowl, add the flour and make a well in the center. Pour the yeast mixture over the flour, then add the melted lard or butter, oil, and salt. Mix everything with a wooden spoon or your hands until the ingredients start to combine.
3. Then, knead the dough on a floured surface. You should obtain a soft but elastic dough that does not stick to your hands. If it is too sticky, add a little more flour.
4. After kneading, cover the dough with plastic wrap and let it rise in a warm place for about 50 minutes, until it doubles in volume.
5. Once the dough has risen, sprinkle flour on the work surface and roll it out into a sheet about 3-5 mm thick. Use a round cutter or a glass to cut out discs 8-10 cm in diameter. You should get about 15 mini pizzas.
6. Place the dough discs on trays lined with baking paper. With your fingers, make small indentations in the center of each mini pizza. These will hold the tomato sauce and toppings.
7. In a bowl, mix the tomato sauce with 1-2 tablespoons of olive oil and a teaspoon of oregano or basil. Place a teaspoon of this mixture on each mini pizza.
8. Let them rise on the tray, covered with a clean towel, for 20-30 minutes.
9. Preheat the oven to 200 degrees Celsius. After the mini pizzas have risen, you can add your favorite toppings, avoiding mozzarella or cheese at this moment. I recommend trying peppers, chorizo, or prosciutto crudo for an intense flavor.
10. Bake the mini pizzas in the oven for 5 minutes. Then, remove the tray from the oven and add mozzarella or grated cheese on top. Put them back in the oven for another 5 minutes, until the cheese melts and turns golden.
11. Remove the mini pizzas from the oven and let them cool slightly before serving. They are delicious warm but remain fluffy the next day, if there are any left.
