Preparation time: 1 hour
Baking time: 50 minutes
Total time: 1 hour and 50 minutes
Number of servings: 4
Necessary ingredients for the cream soup:
- 300 g potatoes
- 1 liter meat broth (preferably homemade, but can also be from cubes)
- 500 g onions (about 4-5 medium onions)
- 100 ml sour cream
- Salt (to taste)
- Pepper (to taste)
- 1/4 teaspoon ground cumin
- 6-8 slices of cheddar
- A little fresh parsley, chopped (for decoration)
Necessary ingredients for the rolls:
- 1 kg flour (750 g white flour and 250 g wholemeal flour)
- 200 g potatoes
- 30 g fresh yeast
- 2 teaspoons salt
- Warm water (about 500 ml, but adjust as needed)
Preparing the rolls:
1. Start by boiling the potatoes with the skin on. They will provide moisture and texture to the dough. Once cooked, let them cool slightly, then mash them without peeling.
2. In a bowl, make a starter with the yeast. Mix 100 ml of warm water with a teaspoon of sugar and the crumbled yeast. Let it rise for 15 minutes.
3. In another bowl, mix the white flour with the wholemeal flour and salt. Make a well in the center of the flour and add the starter, mashed potatoes, and warm water gradually, mixing constantly until you obtain a homogeneous dough.
4. Knead the dough for about 20 minutes until it becomes elastic and smooth. Cover it with a clean towel and let it rise for 40 minutes until it doubles in volume.
5. After the dough has risen, sprinkle a little flour on the working surface and knead it gently for 2 minutes. Shape rolls of about 250 g each and place them on a floured tray. Let them rise for 30 minutes.
Preparing the cream soup:
1. Peel the potatoes and cut them into cubes. Wash them well and boil them in 1 liter of meat broth.
2. Peel the onions and slice them. Divide the onions into two parts: add one half to the soup, and the other half will be fried.
3. Fry the onions in a little oil until golden and caramelized. Once ready, add the fried onions to the soup, without the oil they were fried in.
4. Let the soup simmer on low heat, covered, until all the ingredients are tender and well blended.
5. Using a food processor or blender, blend the soup until it becomes a fine cream. Add salt, pepper, and cumin to taste. Mix well and add the sour cream, continuing to stir until you achieve a creamy and homogeneous consistency.
Baking the rolls:
1. Preheat the oven to a high temperature (about 220°C).
2. After the 30 minutes of rising, place the rolls in the preheated oven and bake for 50 minutes. After 30 minutes, open the oven and turn the tray for even baking.
3. The rolls are ready when they have a golden color and sound hollow when lightly tapped on the bottom.
Serving:
1. When the rolls are baked, let them cool slightly, then cut the top off and remove the inner crumb, leaving about a 1 cm edge to hold the soup. The crumb can be used to make breadcrumbs or other dishes.
2. Fill the rolls with hot cream soup, then add the slices of cheddar and sprinkle with chopped fresh parsley. Partially cover with the roll top and serve immediately, so you can enjoy the intense aroma and velvety texture of the soup.
