Apple Cake
Ingredients: 6-8 apples, 150g of sugar, 5 eggs, 5 tablespoons of sugar, lemon zest, 2 tablespoons of olive oil, 8 tablespoons of flour, 1 teaspoon of baking powder, a pinch of salt
To create a truly delicious and aromatic dessert, we start by preparing a perfect caramel. In a heavy-bottomed saucepan, we add 200g of granulated sugar and place it over medium heat. It is important not to stir the sugar while it melts, but to watch it carefully. After a few minutes, the sugar will start to melt and become liquid. When the caramel takes on a golden hue, we remove the saucepan from the heat. It is essential to be careful, as the caramel can burn very quickly.
In the meantime, we take care of the apples. So, we peel a few apples (preferably tart ones, like green apples) and cut them into small cubes. Once the caramel is ready, we add the apples directly into the saucepan, without letting it cool. We mix everything over low heat, so the apples gradually soften and absorb the sweet flavors of the caramel. After a few minutes, we will notice how the apples become soft and release their juices, forming a delicious mixture.
As the apples cook, we prepare the batter. In a large bowl, we beat the eggs well with 5 tablespoons of sugar and a pinch of salt until the mixture becomes frothy and light in color. Then, we add the olive oil, which will provide a subtle flavor and a fine texture. We carefully mix to integrate the ingredients. In another bowl, we combine the flour with the baking powder, ensuring there are no lumps, and then we start to gradually incorporate it into the egg mixture, gently mixing with a spatula to avoid lumps.
Once the batter is homogeneous, we pour it over the caramelized apples in the saucepan, making sure to cover everything evenly. We preheat the oven to 200 degrees Celsius and place the saucepan in the oven. We let the dessert bake for about 30-40 minutes, or until it is nicely browned on top. It is recommended to do the toothpick test: we insert a toothpick into the middle of the cake, and if it comes out clean, it means it is ready.
Once the dessert is baked, we let it cool slightly before serving. It is delicious both warm and at room temperature. We can accompany it with a generous serving of vanilla ice cream or whipped cream for an extra touch of flavor. Enjoy!
