To prepare a delicious hot pepper jam, start by adding an appropriate amount of vinegar to a pot, making sure to use a high-quality vinegar, as this ingredient will influence the final outcome of the preparation. Boil the vinegar together with sugar for 20 to 30 minutes, stirring occasionally, until the mixture thickens and becomes similar to the syrup of a well-made jam. At this stage, the vinegar's aroma will intensify, and the sugar will begin to caramelize, bringing a pleasant contrast between sweet and spicy.

Meanwhile, carefully wash the hot peppers under a stream of cold water, ensuring that you remove any impurities. After cleaning them, pat them dry with a clean kitchen towel, then proceed to chop them. If you prefer a less spicy jam, remove the seeds and veins from the peppers. Then, slice them into thin rounds, making sure to wear gloves; hot peppers can cause skin irritation.

Once the vinegar has thickened, add the sliced peppers to the pot and continue to boil the mixture for another 20-30 minutes. It is important to check the consistency of the jam, as preferences may vary. If you want a less concentrated syrup, avoid boiling too much, so the jam remains pleasant and fluid.

After achieving the desired consistency, carefully pour the hot mixture into sterilized jars. Make sure the jars are perfectly clean to prevent contamination. Once filled, place the jars lid-side down, between blankets, to cool gradually. This method will help create a vacuum, thus keeping the jam in optimal conditions.

Label the jars with the date the jam was made and store them in a dark, cool place. You can be sure that the hot pepper jam will keep excellently for more than 24 months, but wait patiently for 2-3 weeks before enjoying it to allow the flavors to fully develop.

This jam is perfect as a garnish for juicy roasts, meat dishes, hearty soups, savory sauces, delicious stews, pasta, omelets, or even pizza. It pairs excellently with dishes containing meat and cabbage or any dish where you would normally use classic pickled peppers.
