Pasta with Meat and Saffron
Ingredients: for 4 people: * 250-300 g pasta (tagliatelle, spaghetti, penne...) * 300 g minced beef (or pork, mix, chicken) * 1 onion * 1 tablespoon olive oil or sunflower oil * 200 g sour cream * 0.130 g saffron (one packet) * grated Parmigiano (Parmesan or cheese) * meat broth (optional) * salt, black pepper
To prepare a delicious and flavorful meal, we start by finely chopping the onion, which will form the base of the dish's aroma. We take a large pan and add olive oil, then add the finely chopped onion. We let the onion sauté over medium heat for about a minute until it becomes translucent and develops its unmistakable aroma. It's time to add a little water, helping the onion to soften and caramelize slightly, enhancing its sweet taste.
Once the water has evaporated, it's time to integrate the minced meat. We choose beef or a mix of meats, depending on preferences, and add it to the pan. We mix well to ensure it browns evenly, developing an appetizing texture. As the meat releases its juices, it is important to continue stirring so that it does not stick to the bottom of the pan. After all the water released by the meat has evaporated, we add the cream, which will give the dish a special creaminess, and optionally, a little water or meat broth to adjust the consistency of the sauce.
During the sauce's simmering, we also add a pinch of saffron, which will not only color the sauce a warm shade of yellow but also bring a sophisticated taste. We let everything simmer over medium heat for about 15 minutes, making sure to constantly check the consistency of the sauce. If we notice that it reduces too much, do not hesitate to add a little water or meat broth to maintain enough liquid to coat the pasta.
Meanwhile, we cook the pasta according to the package instructions, ensuring they are al dente. Once they are ready, we drain them well and add them directly to the pan with the meat sauce. We mix vigorously so that each strand of pasta is well coated with the delicious sauce. If the pasta seems too dry, we add a few tablespoons of the water in which they were boiled, to achieve a perfect consistency.
Finally, we do not forget to taste the dish and adjust with salt if necessary. We serve immediately, sprinkling grated Parmesan or cheese on top, followed by a dash of freshly ground pepper. This recipe not only satisfies the appetite but transforms an ordinary meal into a memorable culinary experience. Enjoy your meal!
