Cocoa ice cream
To prepare a delicious and refined dessert, we start by preparing the cream base. In a pot, we reserve one cup of fresh milk, which we will use later, and put the rest, about 750 ml, to boil in a saucepan over medium heat. To this milk, we add half of the sugar to sweeten the mixture.
Meanwhile, we take care of the egg yolks. In a large bowl, we whisk the four yolks with the remaining sugar until we obtain a homogeneous and light-colored mixture. This is the stage where the sugar will completely dissolve, and the yolks will become airy. Then, we gradually add the sifted flour and cocoa, stirring constantly to avoid lumps. At this point, we also add the reserved cup of milk, continuing to mix carefully.
When the milk in the saucepan starts to simmer, we remove the pot from the heat and pour the egg, flour, and cocoa mixture into the hot milk, stirring vigorously to combine the ingredients. Then, we put the pot back on low heat, being careful not to reach boiling point. It is very important to stir continuously with a spatula or whisk to prevent the cream from sticking to the bottom of the pot. This stage lasts a few minutes until the mixture thickens and becomes similar to cream.
Once we have achieved the desired consistency, we take the pot off the heat and add the diced butter, stirring until it melts completely and incorporates into the cream. We let the mixture cool completely at room temperature to allow the flavors to develop. Once the cream has cooled well, we add the vanilla and rum extracts, which will add extra flavor.
The final step is to fold in the whipped cream, gently mixing with a spatula to retain the air in the cream and achieve a fluffy texture. This fine and creamy mixture is then transferred to a suitable container and placed in the freezer for a few hours to set and become a refreshing and delicious dessert, perfect for any occasion. When serving, we can garnish with grated chocolate or fresh fruits, adding a touch of color and freshness.
Ingredients: 1 liter of milk, 300g of sugar, 4-5 tablespoons of cocoa, 5 eggs, 2-3 tablespoons of flour, 50g of butter, 200g of whipped cream, essences: rum, vanilla, almonds. You can also add nuts, hazelnuts, slightly roasted almonds chopped not too finely, raisins, or chopped chocolate (chocolate chips are very good).
