Recipe history

Fruit pastries are inspired by the culinary tradition of delicate desserts that combine various flavors and different textures. This modern recipe, which combines biscuits with cream cheese and fresh fruits, is a reinterpretation of classic tarts and mini tarts, loved by generations. Each bite takes you on a journey of flavors, from the sweetness of the biscuits to the freshness of the fruits.

Preparing the pastries

Step 1: Preparing the dough

1. Start by grinding the biscuits. You can use a food processor to obtain a fine powder or, if you don’t have one, place the biscuits in a bag and crush them with a rolling pin.
2. In a small pan, melt the margarine together with the chocolate cream, stirring constantly to obtain a homogeneous mixture.
3. Pour the chocolate and margarine mixture over the ground biscuits and mix well until you obtain a smooth paste.

Useful tips:
If you want a more intense flavor, you can add a few drops of vanilla essence to the biscuit mixture.

Step 2: Shaping the pastries

1. Prepare the small bowls by lining them with cling film so that you can easily remove the pastries after they harden.
2. Using a spoon, take a portion of the biscuit mixture and press it into the bottom and sides of the bowls, carefully forming a "basket".
3. Place the roasted walnut halves around the edge of the basket to add a crunchy note.
4. Put the bowls in the freezer for 20-25 minutes, during which time the dough will harden.

Step 3: Preparing the filling

1. In a large bowl, mix the cottage cheese with the vanilla powdered sugar until you obtain a smooth cream.
2. In a small pan, place the gelatin with a little water and let it dissolve in a bain-marie, stirring constantly.
3. Add the melted gelatin to the cream cheese, pouring it in a thin stream to avoid lumps.
4. Begin to add the whipped cream, gently mixing with a spatula until everything is well incorporated.
5. Clean and dice the fruits (strawberries, kiwi, and cantaloupe), then fold them into the cream cheese.

Step 4: Assembling and serving

1. Carefully remove the pastries from the freezer and peel off the cling film.
2. Fill each basket with the cream cheese and fruits, being careful not to overfill to avoid spilling.
3. Decorate with slices of strawberries, kiwi, and cantaloupe for an attractive appearance.
4. Place the pastries in the refrigerator for about an hour to set well.

Serving:
The pastries are served cold, topped with a dollop of whipped cream. They are perfect to be enjoyed alongside a cup of fruit tea or a cold lemonade, adding a touch of freshness.

Nutritional benefits

These pastries are an excellent source of protein due to the cottage cheese and fresh fruits, which provide vitamins and antioxidants. The biscuits provide carbohydrates that will give you the necessary energy throughout the day. Additionally, the nuts are rich in healthy fats, essential for a balanced diet.
