Lime Ice Cream with Whipped Cream

To create a delicious and refreshing lime-flavored ice cream, we start by preparing a simple syrup made from water and sugar. In a medium saucepan, we add a sufficient amount of water, ensuring it is proportionate to the sugar, so that we achieve a syrup with the ideal consistency. We bring the water to a boil, then add the sugar, stirring constantly to ensure it dissolves completely. We continue to boil the mixture until the liquid volume is reduced by half, which will give us a concentrated and flavorful syrup.

Once we have the syrup, it’s time to give it a fresh and vibrant note. This is where the lime zest comes in! We carefully grate the zest of a lime, making sure to avoid the white part, which can add a bitter taste. We place the zests in the hot syrup, letting them infuse for about 15-20 minutes. This will allow the flavors to fully reveal themselves. After the syrup has cooled, we add the freshly squeezed lime juice, which will further intensify the flavor and provide a perfect balance between sweet and sour.

In another bowl, we put the heavy cream, making sure it is cold to achieve a whipped cream that is airy. Using an electric mixer, we start whipping the cream, gradually adding the lime syrup a little at a time while continuing to mix. This process will allow the cream to absorb all the delicious lime flavor, transforming into a creamy and fluffy mixture. We mix the ingredients well until we achieve a slightly firm but still soft texture.

Once we have the perfect mixture, we pour the composition into an ice cream mold or a suitable container. It is important to leave a little space at the edges to allow for expansion. Then, we place the mold in the freezer, but not before giving it a little stir. We do this a few times in the first hours to prevent the formation of ice crystals and ensure a smooth texture. After a few hours, when the ice cream is completely frozen, we can remove it from the mold, cut it into portions, and enjoy, relishing the coolness and fresh lime flavor it offers. It is the ideal dessert for hot summer days!
