In another bowl, prepare the banana puree. If you have a blender handy, it will make the job much faster, but if you prefer a manual approach, a fork will work just as well. Mash the bananas until you achieve a smooth puree, free of large chunks. Then, add the apple juice, honey, and milk. Mix the ingredients well, ensuring everything combines perfectly. The honey will provide natural sweetness, while the apple juice will add a touch of freshness and moisture, contributing to the fine textures of the loaf.
Pour the banana mixture over the dry ingredients in the flour bowl and mix with a spatula or wooden spoon. Be careful not to overmix; it is important to achieve a homogeneous composition without developing the gluten in the flour, to keep the loaf soft and fluffy. Once you have a uniform mixture, pour it into a loaf pan that you have previously lined with baking paper. This will make it easier to remove the loaf from the pan after baking.
Place the pan in the preheated oven and let it bake for about 30 minutes at a moderate heat. You will know the loaf is ready when it turns golden brown, and if you do the toothpick test, it will come out clean from the center of the loaf. Once you have removed the loaf from the oven, let it rest in the pan for 5 minutes. This step is important to allow the loaf to stabilize a bit. Then, remove it from the pan and let it cool completely on a wire rack. This will allow air to circulate around the loaf and prevent moisture condensation, ensuring a perfect texture. Once cooled, you can slice it and enjoy it alongside a cup of tea or coffee, relishing its delicious aroma and fluffy texture.
