Pork Liver Soufflé – a simple and flavorful recipe

If you want to impress your family or friends with a refined appetizer, pork liver soufflé is the ideal choice. This dish is not only delicious but also easy to make, bringing a touch of elegance to your table. Moreover, it is a quick recipe, perfect for any occasion. Let's get started!

Ingredients:
- 500 g pork liver
- 6 eggs
- 100 g flour
- 150 g butter
- 350 ml milk
- 50 g grated cheese
- Salt, pepper (to taste)
- Fresh parsley (for garnish)

Preparation time: 20 minutes
Baking time: 30-40 minutes
Total: 1 hour
Number of servings: 6

Step 1: Preparing the liver
Start by cleaning the pork liver of membranes and skins. This step is essential to achieve a fine soufflé without unpleasant textures. Once the liver is clean, cut it into smaller pieces and pass it through a meat grinder. If you don’t have a grinder, you can use a blender, but make sure to achieve a smooth paste.

Step 2: Cooking the liver
In a pan, melt 50 g of butter over medium heat. Add the chopped liver and sauté for about 5-7 minutes, stirring constantly. The liver should be cooked but not overcooked to retain its juiciness. Season with salt and pepper to taste. Once done, let it cool slightly.

Step 3: Preparing the mixture
In a large bowl, whisk the 6 eggs with a whisk. Add the milk and mix well. Gradually incorporate the flour, stirring continuously to avoid lumps. Then, add the sautéed liver, mixing until well combined. Finally, fold in the grated cheese for an extra creamy taste and texture.

Step 4: Baking the soufflé
Preheat the oven to 180°C. Grease a soufflé dish with the remaining 100 g of butter, ensuring it is well coated. Pour the liver mixture into the dish and level the surface. Bake the soufflé in the preheated oven for 30-40 minutes or until it turns golden and fluffy in texture. You can check if it’s done by inserting a toothpick in the center; if it comes out clean, the soufflé is perfect.

Step 5: Serving
Let the soufflé cool slightly before cutting it into portions. Serve it warm, garnished with chopped fresh parsley. It can be accompanied by a fresh salad or toasted bread, turning it into a special appetizer.

Practical tips:
- You can experiment with different types of liver, such as chicken or veal, to achieve varied flavors.
- If you want a more intense taste, add sautéed onions or mushrooms to the mixture.
- Pork liver soufflé can also be prepared in advance; you can cool it completely, store it in the refrigerator, and reheat it before serving.

This pork liver soufflé is not only a simple recipe but also a wonderful way to bring a traditional dish to your table. Try it and enjoy the positive feedback from your loved ones!
