Strawberry mousse pastry rolls are a delight that combines the sweetness of the fruit with the fine texture of the meringue, bringing a touch of joy to any occasion. We start by preparing the strawberries, the main ingredient of the recipe. They are hulled, washed well under a stream of cold water to remove impurities, and cut into smaller pieces. These pieces are evenly sprinkled with 200 grams of sugar, then covered and left in the fridge, ideally overnight, to release their juice and intensify the flavor.

The next day, the strawberries are transferred to a large bowl, the egg whites from fresh eggs are added, and with the help of a mixer, we start beating the mousse. It is important to use a powerful mixer to achieve an airy and homogeneous foam. When the foam begins to form, rum is added, which not only enhances the flavor but also provides a special aroma.

Meanwhile, we prepare the gelatin. It is soaked in cold water for about 10-15 minutes, during which time it will hydrate and become soft. In another bowl, a tablespoon of water along with the remaining 50 grams of sugar is added. It is heated over low heat, stirring continuously until the sugar is completely melted. After the sugar is dissolved, it is taken off the heat and the drained gelatin is added, mixing well to obtain a homogeneous composition.

This gelatin composition will be slowly added, in a stream, over the strawberry mousse, continuing to beat. It is crucial to add the gelatin gradually, like when making mayonnaise, so as not to destroy the air in the mousse. Once everything is well integrated, it is left in the fridge for a few minutes to thicken, ensuring that the gelatin will help the mousse not to weep.

Next, a piping bag with a nozzle is prepared to fill the pastry rolls. It is filled with the obtained mousse, making sure to fill both ends of the dough cylinders. If pastry cones are used, filling will only be done through the open side. After proper filling, they are carefully placed on a platter.

To add a touch of elegance, the rolls are dusted with powdered sugar before serving. These delights are not only visually appealing but also incredibly tasty, making them ideal for impressing guests at a party or simply indulging yourself. Enjoy them with pleasure, as these rolls are truly divine!
