Stuffed Turkey Breast Roll
Turkey breast is an excellent choice for a delicious meal, full of flavors and textures. We start by washing the turkey breast well, ensuring we remove any skin or excess fat to achieve clean and tasty meat. After cleaning the meat, we cut the breast in half, but not completely, so that we form a large slice that will be easy to roll. Using a meat mallet, we gently pound the breast to make it more tender and easier to shape. Then, we generously salt and pepper it to add a first layer of flavor.
The next step is to finely chop the garlic, which will bring extra flavor to the roll. It is spread evenly over the surface of the meat, and then we apply mustard, which will provide a spicy note and a pleasant texture. Slices of Pancetta, with their rich and salty flavor, are carefully placed over the meat, starting from the bottom edge. At the end closest to us, place the cheese sticks, which will add a special creaminess to the roll.
Now comes the interesting part: rolling. Using a technique similar to that of stuffed cabbage, we begin to roll the meat, being careful to keep the filling well inside. Once we have formed a compact roll, we secure the ends with toothpicks or tie them with string to ensure that the filling does not leak out during baking.
For baking, we choose a baking tray, ideally a loaf pan, where we add a tablespoon of lard to prevent sticking. We place the roll in the tray and add water, about 50-70 ml, to create a moist environment during baking. We cover the tray with aluminum foil, ensuring that the foil does not touch the meat, and place it in the preheated oven at 190°C (380°F).
After about an hour, we remove the aluminum foil, and the roll will already be cooked and beautifully browned. By steaming, the meat becomes extremely tender and flavorful, without being dry at all. When serving, we suggest accompanying it with creamy mashed potatoes, drizzled with a bit of the sauce left in the tray for extra flavor. Pickles perfectly complement this dish; personally, I enjoyed the combination with beet salad and pickled grapes. This recipe is not only delicious but also easy to prepare, turning a simple meal into a true culinary feast.
