Necessary ingredients:
- 160 g butter (make sure it is at room temperature for easier melting)
- 170 g sugar (you can use brown sugar for a deeper flavor)
- 2 1/2 cups of flour (type 550 is ideal for cookies)
- 1 egg (preferably from free-range hens)
- 1 teaspoon of baking powder
- Vanilla essence (one teaspoon for a more aromatic taste)
- Jam of your choice (choose a thicker jam, I used raspberry, but feel free to experiment with strawberries, peaches, or even plums)
Preparation instructions:
1. Melting the butter: Start by melting the butter in a double boiler. This technique helps you achieve evenly melted butter without burning it. If you don't have a double boiler, you can use a heat-resistant bowl placed over a pot of hot water.
2. Making the cream: Once the butter has melted, transfer it to a large bowl and add the sugar. Use an electric mixer or a whisk to combine them until you achieve a light and fluffy cream. This step is essential for incorporating air into the mixture, which will make the cookies fluffier.
3. Adding wet ingredients: Incorporate the egg and vanilla essence into the butter and sugar mixture. Mix well until combined.
4. Preparing the dough: In another bowl, mix the flour with the baking powder. Gradually add the flour mixture to the bowl with the wet ingredients, mixing continuously. You will get a soft but slightly sticky dough. Don't worry, it's normal!

9. Filling with jam: Fill each channel with jam, being careful not to overfill the edges to avoid spills during baking.
10. Baking: Preheat the oven to 175 degrees Celsius and place the trays one at a time on the middle rack. Bake the cookies for 15-20 minutes or until they become slightly golden.
11. Cooling and serving: After taking them out of the oven, let the cookies cool in the tray for a few minutes, then transfer them to a cooling rack. Use a sharp knife to cut them diagonally into slices about 2 cm wide.
