- 60 g butter
- 500 g juicy cherries (you can use fresh or frozen cherries)
- 1 teaspoon of lemon juice
- A pinch of salt
- Vanilla essence and rum essence (optional, for extra flavor)
Instructions:
1. Preparing the dough: In a large bowl, mix the flour with the baking powder and starch. Add the egg, sugar, and melted butter. Use your hands to incorporate the ingredients, forming a tender dough. If the dough is too sticky, you can add a little flour, but be careful not to dry it out. Once you have a homogeneous consistency, form a ball and wrap it in plastic wrap. Let it rest in the refrigerator for 15-20 minutes.
2. Preparing the filling: In another bowl, beat the eggs with the sugar until fluffy. Add the orange and lemon zest, vanilla sugar, starch, and cheese. Continue mixing until homogeneous. Heat 60 g of butter in a pan and add the cherries, cooking them for a few minutes to release their juice. Add the lemon juice, vanilla, and rum essences, and a pinch of salt. Mix well.
3. Assembling the tart: Preheat the oven to 180°C. Roll out the dough on a lightly floured surface into a thin sheet, then transfer it to the greased tart pan. Trim the excess dough from the edges. Pour the cheese filling over the dough and add the caramelized cherries, distributing them evenly.
4. Baking: Bake the tart in the preheated oven for about 40 minutes, or until the surface is golden and the filling is firm. Let the tart cool in the pan for 10 minutes, then invert it onto a plate.
