Baked Polenta Gratin: A Culinary Madness

If you are looking for a recipe that combines tradition with innovation, baked polenta gratin is the perfect choice. This unique recipe, inspired by Bebe's creativity, will transform a simple dish into a delight that will leave you speechless. With a rich taste and creamy texture, this meal is dedicated to all 'mamaligoșii', but especially to our friend Gaby, who we know loves polenta in all its forms.

Preparation time: 15 minutes
Cooking time: 35-40 minutes
Total: 50-55 minutes
Servings: 6-8

Ingredients

For polenta
- 250 g cornmeal
- 1 liter water
- 1 teaspoon salt

For gratin
- 200 g Emmental cheese (or any other preferred type)
- 250 g sheep cheese (or cottage cheese)
- 2 tablespoons butter
- 6 eggs
- 1 pinch of salt
- 300 g smoked bacon

Preparing the Polenta

1. Boiling the water: Start by bringing the water to a boil in a large pot. Add a teaspoon of salt to flavor the polenta.

2. Adding the cornmeal: When the water starts to boil, gradually add the cornmeal, stirring continuously with a whisk to avoid lumps. It is essential to mix well to achieve a fine and creamy polenta.

3. Cooking the polenta: Let the polenta simmer on low heat for 20-25 minutes, stirring occasionally to prevent sticking to the bottom of the pot. When ready, it should have a dense and creamy consistency.

4. Cooling and cutting: Once the polenta is cooked, let it cool slightly before cutting it into small cubes. These cubes will be the delicious base of our dish.

Preparing the Gratin

5. Preparing the bacon: Cut the bacon into thin slices and fry them in a pan until crispy. Make sure to turn them on both sides to achieve an even texture. After frying, place them on a paper towel to absorb excess fat.

6. Beating the eggs: In a large bowl, beat the 6 eggs with a pinch of salt and add 100 g of grated cheese. This mixture will add a delicious creaminess to the polenta.

7. Assembling the dish: Grease a baking dish with the 2 tablespoons of butter to prevent sticking. Place the polenta cubes at the bottom of the dish, sprinkle the remaining 100 g of cheese, then add the pieces of sheep cheese and the fried bacon. Finally, pour the beaten egg mixture evenly over all the ingredients.

8. Baking: Preheat the oven to 250 degrees Celsius. Place the dish in the oven and bake for 15 minutes, then reduce the temperature to 180 degrees Celsius and continue baking for another 10-15 minutes. The polenta should be golden and slightly crispy on top.

Serving

Once the baked polenta is ready, remove it from the oven and let it cool for a few minutes. Serve it warm, alongside a generous spoonful of sour cream or plain. It is a versatile dish that can be enjoyed as an appetizer, main course, or even as a side dish.

Chef's Tip

For an even more intense flavor, you can add herbs like thyme or dill to the egg mixture. You can also experiment with different types of cheese or even add sautéed vegetables for a touch of freshness.

Nutritional Benefits

Polenta is an excellent source of complex carbohydrates, providing sustainable energy. Cheese and eggs add valuable proteins, and while bacon is higher in fat, it offers a distinctive taste. In moderation, this dish can be part of a balanced diet.

Frequently Asked Questions

1. Can I use other types of cheese?
Absolutely! You can use telemea, goat cheese, or any other preferred type to customize the polenta.

2. How can I make the polenta easier to digest?
Try reducing the amount of bacon or replacing it with a leaner protein source like chicken.

3. Can I prepare the polenta in advance?
Certainly! You can prepare the polenta a day ahead, store it in the fridge, and bake it on the day of serving.

Variations

- Mushroom polenta: Add sautéed mushrooms to the cheese mixture for an extra flavor boost.
- Vegetarian polenta: Omit the bacon and add vegetables like zucchini or spinach for a lighter version.
- Polenta with tomato sauce: Serve the polenta with fresh tomato sauce for a delicious combination.
