Ingredients: -2 kg lemons -1 hot pepper -1 cinnamon stick -apple cider vinegar (can also be apple cider vinegar with honey) -1 packet of cloves -1 tablespoon of whole pepper -10 teaspoons of coarse salt
Wash the lemons very, very well with a brush under cold running water. This step is essential to remove any surface impurities, as we want to achieve a clean and delicious final product. After washing them, make deep cross cuts at the ends or make 4-6 vertical cuts, about 1 cm deep, but without splitting the lemon completely. Stuff salt into the openings made, ensuring it penetrates well, then press the lemon together towards the center to allow the salt to reach deep into its pulp. Insert cloves into the cuts or slits made, as they will provide an unmistakable aroma to the lemons.
Place the lemons in a jar, making sure to push them firmly to the bottom, but without crushing or mashing them. Put the remaining salt and desired spices, such as pepper or bay leaves, among them, which will contribute to flavoring the mixture. By doing so, some juice will drain into the jar, making room for all the prepared lemons. It is important that the jar is clean and sterilized to avoid any contamination.
After filling the jar with lemons, pour in enough apple cider vinegar so that the lemons are well covered. This step is vital as the vinegar will help preserve the lemons and develop the flavors. To keep them completely submerged in the vinegar, you can place a few sticks of dried dill on top in a cross shape, which will keep them under the water.
Once you have finished preparing the jar, seal it well and store it in a cool, dry, and dark place.
