Braised Cabbage, Lent Dish
To prepare a delicious sautéed cabbage, we start by shredding the cabbage into julienne strips using a sharp knife to achieve uniform strips. This technique not only enhances the appearance of the dish but also helps with even cooking.
In a deep pot, we pour a generous amount of oil, enough to cover the bottom of the pot. We turn the heat to medium and let the oil heat up gently to avoid burning the ingredients. Once the oil is hot, we add the finely chopped onion. It will sauté until it becomes translucent and releases its aroma, which will give our dish a special flavor.
After the onion has sautéed, we add the chopped cabbage. We let it sauté together with the onion for a few minutes, stirring occasionally to ensure it does not stick to the bottom of the pot. The cabbage will start to soften and reduce in volume, which is a sign that the cooking process is going according to plan.
Once the cabbage has started to soften, we add the tomato juice and broth, which will give the dish a vibrant color and rich flavor. Now it's time to add water to allow the cabbage to boil evenly. We mix all the ingredients well, ensuring that the cabbage is well covered by the liquid.
We let everything simmer over medium heat for 25-30 minutes, covering the pot with a lid to retain moisture. During this time, the aroma will begin to develop, and the cabbage will soften perfectly. At the end of this cooking time, we check the consistency of the cabbage; it should be soft but not completely disintegrated.
Before turning off the heat, we add the spices: salt, pepper, and, if we want an extra flavor, we can also add a pinch of sweet or hot paprika, depending on our preferences. We mix well to ensure that all the flavors are evenly distributed.
Once we turn off the heat, we add the freshly chopped dill, which will provide a refreshing taste and enhance the aroma of the dish. We serve the sautéed cabbage warm, as a side dish or as a main course, alongside a portion of polenta or with a few slices of fresh bread. Enjoy your meal!
Ingredients: 1 medium cabbage, 1 finely chopped onion, 150 g tomato juice, 2 tablespoons of tomato paste, water, 2 tablespoons sunflower oil, salt, pepper, spices to taste, fresh dill (I chose to add green onion)
