Tuxedo Cake: A Holiday Delight

Preparation time: 30 minutes
Baking time: 40-45 minutes
Total time: 1 hour and 15 minutes
Number of servings: 10-12

During the holidays, nothing brings more joy than a delicious cake to share with loved ones. Today, I invite you to prepare a Tuxedo cake, a lighter and equally tasty version of the classic cake. With layers of dark and white chocolate, and a splash of sour cherries in liqueur, this cake will win everyone's hearts.

A bit of history: The Tuxedo cake is inspired by the elegance and refinement of a classic cake, but in its cake form, it becomes more accessible and easier to prepare. It also allows you to play with textures and flavors, transforming a traditional recipe into a modern dessert.

Necessary ingredients:

For the base:
- 2 large eggs
- 125 ml oil
- 250 ml yogurt
- 125 ml brewed and cooled coffee
- 250 g flour
- 50 g cocoa
- 150 g sugar
- 1 packet baking powder
- a pinch of salt

For the dark chocolate cream:
- 300 ml liquid cream
- 200 g dark chocolate (55% cocoa)

For the white chocolate cream:
- 200 ml liquid cream
- 250 g white chocolate
- sour cherries in liqueur (to taste)
- 2-3 tablespoons of dark chocolate cream (for decoration)

Ingredient tips:
- Make sure all ingredients are at room temperature before starting, to achieve a uniform texture.
- Choosing quality chocolate is essential, as it will influence the final taste. Opt for chocolate with a higher cocoa content for a more intense flavor.

Step by step:

1. Preparing the base:
- In a large bowl, beat the eggs together with the oil, yogurt, and cooled coffee. Use a mixer to achieve a smooth mixture.
- In another bowl, mix the dry ingredients: flour, cocoa, sugar, baking powder, and a pinch of salt. This is the perfect time to ensure there are no lumps.
- Once the dry ingredients are well mixed, incorporate them into the liquid mixture, gently mixing with a spatula or with the mixer until smooth.

2. Baking the base:
- Preheat the oven to 180°C. Prepare a baking tray (approximately 20x30 cm) by lining it with baking paper.
- Pour the base mixture into the tray and level the surface. Bake for 40-45 minutes or until a toothpick comes out clean.
- After baking, let the base cool completely in the tray.

3. Preparing the dark chocolate cream:
- In a saucepan, add the liquid cream and broken pieces of chocolate. Bring the mixture to a boil, stirring constantly until the chocolate completely melts.
- Let the cream cool for 30 minutes, then whip it until fluffy and it changes color.

4. Preparing the white chocolate cream:
- Use the same method as for the dark chocolate cream: heat the liquid cream and white chocolate until homogeneous, then let it cool and whip until it becomes a thick and fluffy cream.

5. Assembling the cake:
- Cut the cooled base in half and place one half on a serving platter. Spread with the dark chocolate cream (save 2-3 tablespoons for decoration) and place pitted sour cherries on top.
- Refrigerate for 30 minutes to slightly firm the cream.
- Remove from the fridge, spread the white chocolate cream on top, then return the cake to the fridge.
- After an hour, place the second half of the base on top and spread with the reserved dark chocolate cream. Decorate with whole cherries.

6. Serving:
- The Tuxedo cake is cut into slices and served cold. It is perfect alongside a cup of coffee or a glass of sweet wine, ideal for completing the festive atmosphere.

Moist variant:
If you want a cake with an extra layer of moisture, soak the base with a syrup of water and sugar or with a splash of diluted liqueur before assembling. This will add extra flavor and enhance the taste of the cherries.

Frequently asked questions:
- Can I use other types of fruit instead of sour cherries?
Of course! The cake pairs wonderfully with cherries, raspberries, or even peaches. Choose your favorite fruits to customize the recipe.
- What is the best way to store the cake?
Store the cake in an airtight container in the fridge, where it can last up to 5 days, but it is recommended to consume it within the first 2-3 days to enjoy its freshness.

Nutrition: One slice of Tuxedo cake contains approximately 300 calories, making it a delicious choice, but with a moderate calorie content, perfect for enjoying during the holidays.

Enjoy and happy holidays! May this cake become a tradition in your family, bringing joy and a touch of magic to every celebration!
