Water lilies
The dough is the base of this delicious dessert, and its preparation is a ritual full of flavor and patience. Start by heating 250 ml of milk, being careful not to boil it, just to make it warm. In this milk, dissolve fresh yeast, 50 g of sugar, vanilla sugar, a teaspoon of melted butter, and a pinch of salt. These ingredients combine perfectly to activate the yeast, which will help achieve a fluffy dough. In a large bowl, place the flour and make a hole in the middle. Carefully pour the warm milk into that hole and mix a little with the flour, forming a starter. Cover the bowl with a clean towel and let it rise for about an hour, until its volume doubles.
Once the starter has risen, it’s time to start kneading. Gradually add 50 ml of sunflower oil and the three beaten egg yolks, along with a teaspoon of ground cinnamon. Knead the dough well until all the ingredients are fully integrated. Finally, add the beaten egg white, continuing to knead until the dough becomes soft and slightly sticky, with an airy texture. Do not add extra flour, but let it rise in a warm, covered place until it doubles in volume again.
While the dough is rising, you can prepare the filling. Cut the bananas and dried apricots into small cubes. Place them in a bowl and add 100 g of sugar, 5 bottles of vanilla essence, and a bottle of rum essence. Mix well and let the flavors blend, allowing them to sit until the dough is ready.
After the dough has risen, turn it out onto a floured work surface and divide it into two equal parts. Roll out one of the pieces in the greased pan (28 cm long and 20 cm wide) and evenly add the fruit filling. The other half of the dough is rolled out, brushed with melted butter, and rolled tightly. Cut the roll into 15 slices and place them on top of the filling.
Preheat the oven and place the pan in to bake, starting at a high temperature to help the dough rise. Once it has risen, reduce the temperature for even baking. While it bakes, you can prepare the syrup. Boil 300 ml of milk with 6 tablespoons of sugar, stirring until the sugar dissolves. Then add 2 bottles of rum essence for extra flavor.
When the dessert is ready, take the pan out of the oven and, while it is hot, soak it with the prepared milk. Sprinkle powdered sugar on top and let it cool slightly before serving. This wonderful dessert, with its enticing flavors of bananas and apricots, will delight everyone who tastes it!
