Fine Chocolate Cake with Apricot Jam

In our family, on March 21st, we all gather to celebrate not only spring but also my husband Vasile's birthday. This year, I decided to prepare a fine chocolate cake, a decadent dessert that combines the intense flavors of chocolate with the spring sweetness of apricots. This cake is not only a delicacy for the taste buds but also a true culinary masterpiece.

Ingredients:
For the base:
- 150 g milk or dark chocolate (choose high quality for an intense taste)
- 130 g butter (use quality butter for a fine texture)
- 110 g powdered sugar
- 1 packet of vanilla sugar (you can also use vanilla extract)
- 6 eggs (make sure they are fresh)
- 110 g granulated sugar
- 125 g flour (sift it to avoid lumps)
- 300 g apricot jam (choose a quality jam, preferably homemade)

For decoration:
- 400 g milk or dark chocolate (you can adjust the quantity according to your preferences)
- chocolate sauce (for a glazed appearance, optional)

Chocolate cakes are a true tradition in world cuisine, with deep roots in the history of desserts. Preparing the cake:
1. Preheat the oven: Start by preheating the oven to a medium temperature, around 180°C. This will ensure even baking of the cake.

2. Melting the chocolate: In a heat-resistant bowl, add the chopped chocolate and butter. Place the bowl over a pot of boiling water, ensuring the bottom of the bowl does not touch the water. Stir gently until the chocolate and butter melt completely, resulting in a smooth and silky mixture. This is where the magic begins!

3. Preparing the mixture: Separate the eggs, placing the egg whites in a large bowl and the yolks in another bowl. Use a mixer to beat the melted butter with the powdered sugar and vanilla sugar until you achieve a fluffy foam. Add the melted chocolate and mix well. Add the yolks, mixing continuously.

4. Whip the egg whites: In another bowl, beat the egg whites with the granulated sugar until you achieve a firm foam that holds its shape. Use a spatula to fold in 1/3 of the egg whites into the chocolate mixture. Then, gradually add the sifted flour, mixing gently to avoid losing air in the mixture. Finally, add the remaining egg whites.

5. Baking: Pour the mixture into a 24 cm diameter cake pan lined with baking paper. Bake the cake for 30-40 minutes or until it passes the toothpick test. Let it cool in the pan for 10 minutes, then remove it to a rack to cool completely.

6. Assembling the cake: Once the base has cooled, cut it in half horizontally. Warm the apricot jam slightly to make it more fluid. Spread half of the jam on the first half of the base, then place the other half on top. Spread the remaining jam over the cake.

7. Glazing: In a bowl, melt the chocolate for decoration and carefully pour it over the cake, starting from the center and allowing it to drip gently towards the edges. Place the cake in the fridge for 15 minutes to set the glaze.
