To prepare a delicious dessert in the form of a cheesecake with fruits, we will start by making a soft and aromatic sponge. In a large bowl, we will beat 6 egg whites until we achieve a firm foam that forms peaks. This step is essential for obtaining a fluffy and light base. In another bowl, we will cream the 6 egg yolks with 6 tablespoons of sugar until the mixture becomes creamy and light in color. Gradually, we will incorporate the yolks into the beaten egg whites, making sure to mix with gentle movements so as not to lose the air in the foam.

After we have well integrated the two mixtures, we add the 6 tablespoons of flour and the baking powder, continuing to mix gently. This step will contribute to the final structure of the base. Once we have obtained a uniform mixture, we pour it into a baking tray lined with parchment paper and place it in the preheated oven. We bake until the base turns golden and passes the toothpick test. Once baked, we remove it from the oven and let it cool completely. If we want a more appealing look, we can add a few drops of red food coloring to the base mixture, giving it a vibrant hue.

While the base cools, we take care of the cheese mixture. We will cream 500 g of fresh cheese with 200 g of powdered sugar, the grated zest of one lemon, and 2 packets of vanilla sugar until we achieve a fine and aromatic cream. The gelatin will be soaked in 100 ml of cold water, and then, over a steam bath, we heat it until it completely dissolves. This will be added to the cheese cream. Whipping 400 ml of cream until it becomes firm, we add a pinch of cream stabilizer and gently mix it into the cheese cream, ensuring we achieve an airy texture.

On the cooled base, we spread an even layer of strawberry jam, then add the cheese mixture. On top, we arrange fruits from the compote (preferably strawberries, peaches, or pineapple) to add freshness and color. Finally, we prepare the gelatin from 750 ml of Fanta, which we bring to a boil after dissolving a packet of strawberry pudding in it. We pour the warm gelatin over the fruits and the cake, letting everything cool well in the refrigerator.

This cake can be served with a drizzle of whipped cream on top for an extra touch of flavor and aesthetics. Each slice will bring joy to those who savor it, and the combination of textures and flavors will make it an unforgettable dessert.

 Ingredients: 6 eggs from which we will make a sponge cake (for the sponge cake from 6 eggs we also need 6 tablespoons of sugar, 6 tablespoons of flour, 1 baking powder /but we can use a ready-made base) 1 kg of strawberry jam, 200 g of sweet cheese, 1 powdered sugar, 1 lemon, 2 packets of vanilla sugar, 1 packet of gelatin, 1 packet of cream stabilizer, 400 ml of cream. On top: 1 packet of strawberry pudding, 750 ml of Fanta (it should be red), strawberries, pineapple, tangerines from compote.
