We season the chicken drumsticks with salt and pepper, ensuring that each piece is well coated with spices. We set them aside to 'remember', meaning to absorb the flavors and become tastier. In the meantime, we start preparing the croutons by cutting a piece of bread into appropriately sized cubes, which we will toast in a pan with a bit of butter and oil. It is important to stir them constantly to achieve an even golden crust.
Once the croutons are ready, we turn our attention to the vegetables. We chop the mushrooms and red bell pepper into small cubes, then sauté them in a pan over medium heat, using a mix of butter and oil to give them a rich flavor. When the mushrooms become soft and the bell pepper softens, we add finely chopped parsley leaves, which will add freshness and flavor.
At this stage, we prepare a large bowl to hold all the previously mentioned ingredients. We gently mix, ensuring that each ingredient is evenly distributed. In another container, we beat two eggs as for an omelet, then incorporate them into the vegetable and crouton mixture. We gradually add a bit of flour and chicken broth, so that the mixture becomes homogeneous and has the desired consistency. Here, we have the option of using aluminum foil or cheesecloth; personally, I find that the roll comes out better in cheesecloth, which allows for even cooking.
Now we prepare a pot of salted water, which needs to be boiling. If we haven't put it on the heat yet, now is the time to ensure it is ready, as our roll will require 20-30 minutes of boiling. In the meantime, we return to the chicken drumsticks. We glaze them with our preferred oil and place them in a preheated oven, turning them over halfway through cooking to brown evenly.
After the roll has boiled, we take it out and let it cool on a rack, then carefully remove the cheesecloth or foil. We notice that, although it can be served immediately, the roll becomes much tastier the next day after sitting overnight in the fridge. At the meal where I tasted this dish, all the ingredients were served together: the ham, the roasts, and the roll, creating an explosion of flavors.
You will decide how to serve the dish, depending on the occasion and preferences. I wrote this recipe for general use, but I prepared it in the summer, in the CH oven, while in winter I prefer the classic oven. So, good luck if you dare to try it, and enjoy your meal!
