Swordfish alla pizzaiola
Ingredients: Ingredients for 4 people: *4 slices of swordfish (frozen or fresh) *40 g capers *1/2 cup of olive oil *2 tablespoons (heaped) of oregano *2 well-ripened tomatoes *20 pitted olives *salt *pepper
To prepare a delicious marinated fish dish, we start by preparing the essential ingredients. We take pieces of fish, which can be salmon, trout, or cod fillets, and carefully place them in a bowl. Over them, we pour extra virgin olive oil, which will not only add a special flavor but will also help in marinating the fish. We add a tablespoon of dried oregano, which will give our dish a Mediterranean taste. We gently mix to ensure that each piece of fish is well coated with this aromatic mixture. Now, we let the fish marinate for 15 minutes to allow the flavors to penetrate.
Meanwhile, we take care of the vegetables. We take some capers, chop them finely, being careful not to crush them completely to maintain their texture. Then, we cut the tomatoes into slices or cubes, depending on preferences, making sure they are juicy and fresh. These ingredients will add a pleasant contrast to the fish and enrich the dish with vitamins and minerals.
After the marinating time has expired, we carefully remove the pieces of fish from the oil. It is time to brown them in a non-stick pan, without oil, over high heat. We proceed carefully, placing the pieces of fish in the pan and letting them brown for 5 minutes on each side. This will create a delicious crust on the outside while keeping them juicy on the inside. Once browned, we transfer them to a plate, being careful not to destroy their texture.
In the same pan, we add 3 tablespoons of the oil used for marinating, which we previously strained to remove any impurities. Then, we place the pieces of fish back in, add the chopped tomatoes, capers, and some green or black olives, depending on preferences. These ingredients will create a flavorful and thick sauce that will envelop the fish.
We sprinkle the remaining oregano on top, thus adding an extra flavor, and cover the pan. We let the dish cook over medium heat for 8-10 minutes until the tomatoes soften and a pleasant sauce forms. It is important not to let the fish cook too much to maintain its tender texture. Finally, we can serve this delicious dish alongside a side of rice or a fresh salad, enjoying a Mediterranean feast full of flavors!
